All tea comes from one plant, Camellia Sinesis that is related to the evergreen family. Depending on where grown, nature and climate dictate the quality of tea, much like wine.
There are four ways of processing tea.
Green tea is plucked and steamed or fired to preserve color and keep the oils from oxidizing. For this reason green tea is the lowest in caffeine, about the same as decaf coffee. In addition the delicate green tea leaf requires a much lower water temperature for infusion, aprox 140-170 degrees.
